Ingredients:
• 1 cup Arborio rice
• 1 small onion, finely chopped
• 2 tbsp olive oil or butter
• 1/2 cup dry white wine (optional)
• 3 cups chicken or vegetable stock (warm)
• A pinch of Rumi Saffron threads, steeped in 2 tbsp warm water
• 1/2 cup grated Parmesan cheese
• Salt & pepper to taste

1. Heat oil/butter in a pan, sauté onions until translucent.
